Tasting Notes

Fondo Antico is a family-run estate, in western Sicily near the historic port of Trapani, just north of Marsala. Combining modern winemaking technology with the traditions of the region, Fondo Antico produces wines of great character. A combination of Sicily’s bountiful sunshine, gentle Mediterranean breezes, and excellent soil characteristics help to make this possible.

Many of the vines are trained in the ancient goblet configuration; however the more modern Espalier trellising system is starting to take over with newer plantations. Fondo Antico's winemaker is Lorenza Scianna.

Grillo (pronounced gree-low) is a white grape variety known to thrive in high temperatures and widely used in Sicilian wine-making and, in particular, for Marsala. Its origins are uncertain, but it was widely planted around Trapani by 1897; today it is grown throughout Sicily but represents less than 5% of total plantings. Although this grape has had a long association with Marsala, in recent years it is being used to produce distinctly aromatic, fuller-bodied, dry white wines.

Grillo also means cricket in Italian (hence the image on the label), and “Grillo Parlante” translates as the “cricket who speaks”. This is the name given by Carlo Collodi in his novel The Adventures of Pinocchio to the insect that became Pinocchio’s conscience. It was for the Disney adaptation of the Tuscan novel that the speaking cricket was given a name – Jiminy Cricket.

The wine, Grillo Parlante, is made from 100% hand-picked Grillo grapes, grown using the traditional goblet configuration. Fermented for 10 days in temperature-controlled stainless steel tanks to capture the unique aromatics of the grape. The wine was cold stabilized and remained in bottles for 2-3 months before release.

Our tasting note: Bright lemon-yellow colour, with full, rich aromas and flavours of apricot, peach, Mandarin orange, pineapple, and tropical flowers. Dry and medium-bodied, with firm balancing acidity and a nice lingering finish.

Pairing suggestions: A great wine on it's own, but will pair with grilled seafood, white meats, and vegetarian dishes.
