Tasting Notes

Located in Valgatara in the heart of the Valpolicella Classico region, brothers Aldo and Luca Degani are a generation of growers running a small, dynamic winery in their simple cellar. Year over year, their adherence to the traditions of their forebears demonstrates that quality depends primarily on what nature provides. According to Gambero Rosso, one of the major wine publications in Italy, “they amaze us by regularly turning out great results, vintage after vintage. Wines of high quality and lashings of personality.”

Region: Valpolicella is an historic wine-growing area in the Veneto region of northeast Italy, known primarily for red wines of the same name. The heart of the area is called “Classico”, and only grapes grown in Classico area can claim this distinction.

This wine is made from a blend of three grapes – Corvina (45%), Corvinone (25%), and Rondinella (30%) – from Degani’s own vineyards. Corvivone, a recently discovered mutation of the Corvina grape, replaces the traditional Molinara varietal of Valpolicella, as Corvinone is known for contributing more finesse and balance to the wine. The Corvina grape contributes the characteristic fruit aromas and flavours, with a touch of almond, while the Rondinella grape contributes volume (Molinara - about 5% for this wine - is used mostly for colour).

After a 15-day, cool maceration to extract colour and bright fruit flavours and aromas, with regular punchdowns, the wine is fermented and aged in temperature-controlled, stainless steel tanks to retain freshness. 13.5% all./vol.

Tasting Note: Bright/deep ruby colour. Fresh and drinkable, this wine has deep aromas of juicy cherries and plums. Quite full in the mouth, tasty, and well balanced on the finish.

Menu Matches: The perfect choice for guests who prefer fruitier style, medium-bodied wines. It is versatile, like Chianti, and will complement medium- to fuller-bodied dishes, and particularly tomato-based pasta dishes, and risotto with aged cheeses.
