Tasting NotesThis family-run estate in Treviso, in northeast Italy, was founded over 90 years ago by the Nardini family. The decision was made at that time to dedicate their lives to working the land, to understand what it can offer, and follow where it takes them. Now, brothers Pietro and Paolo take that passion for the land and the vines even further by applying the latest technological techniques while still respecting the traditions of the region. The family owns ~150 hectares of vineyards, slightly over half being dedicated to the production of Prosecco - 12 Ha of Prosecco DOCG and 65 Ha of Prosecco DOC. Other vineyard holdingss are about 2/3rds white wine and 1/3rd red. Total annual production is approximately 6 million bottles. This Prosecco is made from 100% Glera grapes, harvested from low-yield vineyards in the Veneto - Province of Treviso - ranging from 30-180 mt above sea level. The soils are morainic in origin, medium-textured bottom, mainly sandstone and clay. Harvest was in September. Double-arched cane training system. Following destemming and soft crushing, in an environment of controlled atmosphere to protect the juice from oxidation and bacteria, the first fermentation - to create the base wine - took place in temperature-controlled (14º - 16º celsius), stainless-steel tanks. Following the Martinotti method in an autoclave, the 2nd fermentation - to create the bubbles - lasted about 45 days. The process is carefully monitored and managed, automatically analyzing the evolution of the wine, and dosing nutrients and oxygen to get the best results from the yeast. Once bottled, the wine rests for 2-3 weeks before release. Our tasting note: Bright, straw-yellow colour. Fresh aromas and flavours of apple, pear, and warm citrus, with pleasant floral notes. Dry (brut), with a fine and persistent perlage, marked acidity, and a clean finish. 11.0% alc./vol.; RS 5.7 gr./L. Food matches: Easy to drink on its own, or for a special occasion or to celebrate over the holidays. Pair with fish dishes, shellfish, white meats, vegetarian dishes, and fresh fruit desserts |
