Tasting Notes

The winery was born from a vision to produce a Rías Baixas wine of exceptional quality and a unique personality. Taking advantage of the family experience in the wine sector, Santiago Roma established his own marker for quality, and in 1997 opened the winery in an old farmhouse, completely renovated and equipped to comply with his demanding quality standards.

The winery overlooks the Salnés Valley - considered the birthplace of the Albariño grape - and the six hectares of land owned by the winery along with other controlled plots. All vineyards - estate and controlled - are treated with natural and environmentally-friendly products to fertilize and to control weed growth, and chemical products are never used.

Throughout the production process, artisanal methods and modern technology are combined. Santiago asserts that the vineyard and land quality, the unique microclimate, the passion and dedication of the winery personnel, and the exhaustive controls carried out during the whole process, make it possible to achieve a personalized wine which brings pleasure to the palate.

This wine is made from 100% Albarińo, hand-harvested from estate vineyards in the Salnés Valley, north of Pontevedra. The grapes are de-stemmed before pressing at low temperature and pressure. The juice is further cold racked to remove any impurities. Fermentation - with native yeasts - is in temperature-controlled, stainless-steel tanks (between 17-18 celsius) to capture the signature grape varietal characteristics. Aging is also in stainless steel tanks, on the lees, for up to three months. 13% alc./vol.; R.S. 3.8 gr/L..

Our Tasting Note: Bright, straw-lemon-yellow colour. Fresh, bold, tropical, aromas and flavours of pear, warm citrus, pineapple, and stone fruit, with mineral/herbal notes. Light- to medium-bodied, dry, with a fresh mouthfeel of acidity and a long clean, elegant finish.

Pairings: Excellent on its own, but it will pair well with seafood, shellfish, Sushi, grilled white meats, Paella, and grilled vegetables.
