Tasting Notes

These wines are a dream fulfilled for Sara Martinez-Lagos and Leon Florez, who combined have more than 25 years experience in the wine trade. They chose the name Latido de Sara - “Sara’s Heartbeat - in honour of Sara’s father who passed away a few years ago, and who always encouraged her to follow her own path, and to make her own wine.

In 2020 Sara and Leon began a collaboration with friends who own a small winery in Getariako to offer the Bidaia line of Txakolina wines. In the Basque language, “Bidaia” means “Camino”, and refers to the way/path Sara and Leon are taking to fulfill their dreams.

This wine is made from a blend of 80% Hondarribi Zuri, 15% Gros Manseng, and 5% Petit Courbu grapes, hand-picked from Pergola-trained vines, grown on hillside slopes at an altitude of about 350 metres, about 8km from the Cantabrian Sea. Yields are low and cropping is sustainable.

The grapes receive a pre-fermentation chill after harvest, then transferred to temperature-controlled, stainless-steel tanks where each variety and plot is fermented separately. The juice remains on the lees for about two weeks, and when fermentation is complete the wine is cold stabilized and lightly filtered. Alc./vol.: 10.5%. R.S. 3.4gr/L.

Our Tasting note: Pale yellow colour with green tinges. Aromas and flavours of fresh citrus and apricot with slight mineral/floral notes. Light-bodied, dry, fresh and crisp, with a good balance between the fruit and the acidity. Slight mineral zippiness.

Suggested Pairings: Lovely on its own, it will pair with appetizers, seafood, Sushi, grilled fish and white meats.
