Latido de Sara Bidaia Txakolina Rosé Getariako DO 2022

Tasting NotesThese wines are a dream fulfilled for Sara Martinez-Lagos and Leon Florez, who combined have more than 25 years experience in the wine trade. They chose the name Latido de Sara - “Sara’s Heartbeat - in honour of Sara’s father who passed away a few years ago, and who always encouraged her to follow her own path, and to make her own wine. In 2020 Sara and Leon began a collaboration with friends who own a small winery in Getariako to offer the Bidaia line of Txakolina wines. In the Basque language, “Bidaia” means “Camino”, and refers to the way/path Sara and Leon are taking to fulfill their dreams. This rare rosé Txakolina is nade from a 50-50 blend of Hondarribi Zuri and Hondarribi Beltza (the red Txakoli) grapes, hand-picked from Pergola-trained vines, grown on hillside slopes at an altitude of about 350 metres, about 8km from the Cantabrian Sea. Yields are low and cropping is sustainable. The grapes receive brief 2-hour maceration, then transferred to temperature-controlled, stainless-steel tanks to cold decant for 24-30 hours. Fermentation last ~10-12 days and the juice remains on the lees for about six weeks, and when fermentation is complete the wine is cold stabilized and lightly filtered. Alc./vol.: 10.5%. RS 5.3 gr/L. Our Tasting note: Bright pink colour. Aromas and flavours of fresh strawberry and cranberry, with slight herbal/floral notes. Light-bodied, dry, crisp, with a good balance between the fruit and the acidity. Slight mineral zippiness. Suggested Pairings: Lovely on its own, it will pair with appetizers, paella and other rice dishes, grilled seafood and white meats. |
