Agusti Torelló Mata Cava Brut Reserva DOC 2019

Tasting NotesIn the heart of the Penedes, near the town of Sant Sadurni d’Anoia, Agustí Torelló Mata produces a range of high quality Cava, perhaps most notably for Kripta, unique for its extended ageing and handmade amphora shaped bottle. Agustí Torelló Mata is family owned and run; each of the four Torelló siblings has an active role in the business. They only produce Cava and its products are highly regarded by some of Spain’s most famous restaurants. There has been a movement recently in Spain to use the more fashionable higher producing grapes like the chardonnay and pinot noir in the Cava blend. Agustí Torelló stands firmly with tradition and flavour, by using only Macabeo, Xarel-lo, Perellada, and Trepat (for the Cava rosé). The production of Agusti Torello Mata is very limited due, among other things, to the age of their vines Description: Made from a blend of 45% Macabeo, 25% Xarel-lo, and 30% Parellada grapes, hand-picked from 35+ year old vines. The vineyards are certified organic and the wine is certified vegan. Alcoholic fermentation was in stainless steel tanks using only indigenous yeasts. Second fermentation took place in the bottle with 36 months aging on the lees. Bottles are disgorged individually, and only when required for market to ensure optimum condition of the finished wine. (Date of disgorgement is shown on the back label). Bottled "Brut" with approximately 6.0gr/L residual sugar. 11.5% alc./vol. Tasting note: Pale straw colour, with green tinges; with very fine persistent bubbles that evolve slowly in the glass. Aromas and flavours of fresh ripe apple, peach, and warm lime citrus, with slight leesy notes. Dry, with a very long and rewarding rich and elegant finish. Pairing notes: Delightful on its own; it will accompany appetizers, salads, Sushi, white meat courses, seafood, fish, and fruit desserts. |
