Tasting Notes

This Natural and Vegan Cava is made from 100% Xarel-lo and is aged for 18 months sur lie in the bottle. The dosage contains no sugar and the wine sees no sulphur at any point during the winemaking process. Certified organic. When they first produced this wine without any sulphur, they sent a case to Amsterdam and a case to Singapore and then had someone mail the wine back. This was done to see if there would be any adverse effects of having a zero sulphur wine during shipping. The wine returned in good condition and they increased production of their no SO2 Cava.

Critical Praise

"Mature, open and oxidative (there's no S02 added), this smells like well aged traditional method sparkling, complete with toasted wheat and honeyed notes, and plenty of biscuity-doughy autolysis flavour. The palate is fully dry (brut nature) and well-balanced, ample and mouth filling, with gentle mousse and creamy texture overall. The finish lingers on a Fino sherry-like note, which, if you like sherry as I do, is a good thing. Complexity is high. Tasted July 2020." - 91 points (John Szabo, MS, WineAlign.com, July 13, 2020).

"This organically produced cava has generous and complex nose, with some matuing earthy/mushroom character amid the toasty, honeyed and nutty elements.. It mid-weight, very firm, bracing and dry with notable acidity. The same flavours run to excellent length; the finish is quite nutty and bitter. Not for all tastes perhaps but it is excellent.
