Pearce Predhomme Chenin Blanc Old Vine - Wild Ferment WO Stellenbosch 2020

Tasting NotesA wine born from a collaboration between Nicholas Pearce and Will Predhomme to create wines from their favourite wine regions. This Chenin is made from old bush vines planted grown in decomposed granite/quartz on the Helderburg (Eng. Clear Mountain), in the southwestern-most corner of Stellenbosch, adjacent to False Bay. This Chenin Blanc is a Wild Ferment, meaning that the fermentation started with the grapes' own natural yeasts. On the nose, it has fresh aromas of under-ripe stone fruit & tangerine, with firm minerality & restraint. This is a texture-driven wine, the intensity & weight is by the grape only, with an almost grippy finish. The acid is perfectly balanced with the weight, giving the impression of heft without the additives. A naked & true representation of South African Chenin Blanc. This Chenin Blanc pairs perfectly with all kinds of fresh seafood; and also with tartares (specially those that include avocado!). Smoked salmon or trout would also be delicious next to a glass of this old vines Chenin.
