Tasting Notes

The Chardonnay that dominates this blend comes from the clay and sandy soils of the valley of Pézenas, and is fermented and aged in stainless. The Roussanne rounds out the blend with 5-10%, depending on the vintage, and comes from the rocky Grès de Montpellier appellation, which currently only regulates red wines. The Roussanne is barrel aged for six months in new, lightly toasted French barriques, with lees contact and bâtonnage, and neither variety goes through malolactic. The wine is rich and full with potent yellow apple, baked pear, toasted coconut, on a fleshy palate. The creamy fruit is propped and lined with lightly toasted wood. The Roussanne gives an oily perfumed note to the richer Chardonnay, leaving a floral white blossom on the finish.
