Tasting Notes

production area: towns of Quart and Saint Christophe
surface: 1.44.00 ha
vine training technique: guyot
exposure to sunlight: south, south-west with an incline of 60%-80%
year of planting: from 1990 to 2002
harvest time: end-October, hand-picking in small crates

Vinification: in wooden vats with destemmed grapes, without adding selected yeast, maceration on the skins for 8-10 days with punching down three times a day at controlled temperature.
maturation: partly in wooden vats and partly in steel
wine descriptors and food pairing suggestions:
intense ruby-red colored, persistent and elegant on the nose
with fruity aromas of soft fruit and delicate yet complex spicy notes; full and soft on the palate, rich in tannins which lend elegance and freshness to the wine.

It ages beautifully in the bottle. Excellent with red and game meat and ripe cheese.
