Tasting Notes

The label is a picture taken in 1907 of Velázquez family at Casa Los Frailes estate. This was the 11th generation, currently it is the 13th Generation working at the winery.
Bilogía is the freshness expression of the two Meditteranean grapes, Monastrell and Syrah at Casa Los Frailes estate. A high altitude at 650-700 meters over sea level, a strict dry farming, soils extremely calcareous, and the influence of the Mediterranean Sea makes this wine a very fresh, pleasant and round wine.

Aging for twelve months in oak barrels highlights its unique character. Its personality makes it a pleasant, warm, complex wine, perfect for tasting and drinking any time. It has a cherry red color with purple shines. On the nose, it is fresh, with intense aromas of red fruits, jam, cherries and plums; and smoky tones with notes of liquorices and coffee. On the palate, the fruit perfectly blends with the oak, showing sweet tannins followed by a round, fresh and complex structure. Long and intense aftertaste.

This bold wine begs for rich foods to combine with its tannins. That's why we recommend to look for lots of umami when pairing it: beef short ribs, lentils, shiitake and portobello mushrooms, lamb, rabbit, soy sauce and black pepper... Adding herbs to your dishes such as thyme, lavender and rosemary will also enhance the floral character of the wine.
