Tasting Notes

These wines are a dream fulfilled for Sara Martinez-Lagos and León Flórez, who combined have more than 25 years experience in the wine trade. They chose the name Latido de Sara - “Sara’s Heartbeat - in honour of Sara’s father, who always encouraged her to follow her own path, and to make her own wine.

This wine (the name translates to “the van overlooking the River Órbigo) is a special project between Sara and León, based on the recovery of old vineyards planted between 1915 and 1945 near the River Órbigo, in the Province of Leon. It took more than four years to recover the plots which had been abandoned for many years. In the vineyards they don’t use pesticides or chemical fertilizers, and follow some Biodynamic agricultural principles. The first vintage was 2016, and there was no wine in 2017 due to severe frost damage in the vineyards.

It is made from 80% Mencia, 5% Garnacha Tintorera, and 15% Palomino grapes; hand-harvested from vines grown on hillside slopes at an altitude of 820-850 metres, with predominantly stony/clay soil. The climate is very dry from Spring to Autumn.

Grapes are destemmed, not crushed, and alcohol fermentation takes place in stainless steel tanks. Malolactic fermentation is in barrels, and the wine is aged for 12 months in 700L French oak barrels - 2nd use. 13.5% alc./vol.. Limited production: ~800 bottles.

Our Tasting note: Bright, deep, ruby colour with violet hues. Complex aromas and flavours of blueberry, raspberry, cherry, and plum, with notes of anise, vanilla spice, and mocha. Medium- to full-bodied, with well-integrated tannins, and a smooth and elegant finish.

Menu matches: Grilled, braised, and roasted meat dishes (beef and lamb), rice dishes, and earthier vegetarian options.
